To make this recipe, you’ll need:
- sweet potato
- beet
- onions
- carrots
- small potatoes
- fresh garlic
- garlic powder
- dried thyme
- chicken thighs
- salt and pepper
- smoked paprika
- olive oil
To make this recipe, it’s helpful to have these items on hand in your kitchen (affiliate links):
- a large sheet pan
- a sturdy chopping board
- a sharp knife for chopping
- a garlic press
- a vegetable peeler
- measuring cups and spoons
- a pair of tongs
- an instant-read thermometer for measuring the internal temperature of the chicken
Time needed: 30 minutes
Follow these steps for the perfect chicken dinner!
- Preheat your oven.
Preheat your oven to 425 degrees Fahrenheit and prepare a large sheet pan.
- Chop strategically
Make sure the vegetable pieces are all approximately the same size – approximately 1 1/4 inches square. This will make sure they cook evenly. You’ll find that the veggies get a touch crispy on the outside and they stay nice and soft on the inside, just the way we like them!
- Season well.
Season the veggies and the chicken generously for lots of flavour.
- Use an instant read thermometer.
Ensure the chicken is cooked through before serving by testing the internal temperature, especially if you’re using different cuts of chicken than the recipe calls for, and adjust your baking time accordingly. The chicken should be 165 degrees Fahrenheit before serving (or 74 Celsius).

Be sure to adjust the cooking time and the size of the veggies depending on the chicken you use as different cuts of chicken require different cooking times (depending on their size and thickness).

Have you tried pan sheet cooking using frozen veggies. Do you need to be concerned about the frozen veggies burning or the chicken not done cooking at the same time. Brenda O’G
Yes, it works with frozen veggies but you’d need to add them 5 minutes into the cooking process as they take less time to cook. Happy cooking!
This recipe was SO easy I almost felt like it wouldn’t work out! I kept checking the oven expecting that I got something wrong! I love that it’s also super customizable – you can add or remove almost any variation of vegetables and spices. I added a hint of chilli flakes on mine, and I threw some chopped parsnips and mushrooms into the mix. So simple, and healthy, and DELICIOUS! Thanks so much for this awesome recipe. I’ll be using it again and again 🙂
I’m so happy you enjoyed it! It is definitely in our family’s rotation too. Thank you for taking the time to leave your feedback!

What can make the chicken delicious and the seasoning to sink in?
What do you mean? Rubbing the chicken with the spices and baking it makes it delicious.
